Bread Made With Wild Yeast.

Sourdough is bread made without commercial baker’s yeast. It is leavened with naturally occurring wild yeast. This is how all bread was before the 19th Century. It has more flavor, a more complex fragrance and naturally lasts longer outside without any chemical agent. Sourdough toasted is has a character of its own, crunchy and flavourful.

In the last fifteen years, Sourdough has gone through a major revival in the artisanal bakeries in the US and Europe. Not only because of the amazing texture and flavor of sourdough but as a product free of chemical enhancements and additives.

Our sourdough is of the school of modern San Francisco Sourdough, which itself was reborn in the tradition of French ‘levain’ breads. We are proud to be on this journey and are committed to learning how to be better everyday as much as we are to making great bread.
